In September, we made our second sourcing trip to the South American country, and this new Organic Salkantay is the result of that trip. A tale of two farms…. Santa Ana, outside of Guatemala City Coffee in Guatemala is often divided into two worlds. Small producers such as in Hue Hue who find voice and power through the co-operative model. I saw this in action first hand in Huehuetenango and have written this up in my last journal story on this origin trip. The other coffee production model in Guatemala is the private farms. We were thrown into the deep end with a visit in our first day in Guatemala to the vast dry mill of the federation of co-operatives of small producers FEDECOCAGUA. The organisation is a country wide representative body for 26 different small cooperatives, helping to support more than 10,000 small producers. These co-operatives process and sell their coffee through FEDECOCAGUA which channels profits back into support for the producers such as financing, access to international markets and technical support from their team of agronomists. This model has been very successful with producers finding strength in numbers in recent years that has challenged the power of traditional, family owned private farms. Diego Robelo is a renowned producer whose family have co-owned Aquiares Estate in Costa Rica since the 1970s. More Than a Coffee Farm Sitting high on the fertile slopes of the active Turrialba volcano in central Costa Rica, Aquiares has been growing coffee since the 1890s. Diego’s father Alfonso bought the estate in 1971 alongside two other families, and took over management in 1992 with the aim of revitalising a struggling farm. In September 2025 we made our second origin trip to Peru to source beans from the Huadquina Cooperative in the remote town of Santa Teresa in the Sacred Valley. The valley winds for around 60km from the ancient Incan city of Cusco into the Andean highlands. It follows the spectacular Urubamba river and is surrounded by jagged peaks that include the fearsome, snow topped mountain Salkantay (6,271m). The valley is still deemed sacred by many as it was once at the heart of the Incan kingdom and is a relatively short distance from Machu Picchu. The Huadquina Co-operative has a dry mill on the edge of Santa Teresa where we cupped samples from this most recent harvest. Get into the summer groove with our latest single origin offering: this bright and clean washed coffee from the highlands of northern Nicaragua. The largest country in Central America, Nicaragua is known as ‘The Land of Lakes and Volcanoes’—in fact, it boasts more than 25 volcanoes (eight of which are active!) and 14 crater lakes. The department of Nueva Segovia lies on Nicaragua’s northern border with Honduras. This mountainous region produces some of the country’s best coffee, including that produced by Katherin Herrera on her farm Ojo De Agua.
