West Coast Roast is a beautifully balanced blend of some of our most stellar coffees in the roastery right now. Inspired by our love of the Hebrides, we roast this one to its brightest, sweetest best. Perfect for filter.

The Pink Bourbon variety is full of sweetness and character and is found widely in the southern part Colombia's Huila province where many coffee producers have planted it over the past 10 years. The variety has adapted well to climatic changes and has not been significantly affected by pests and diseases such as leaf rust, maintaining a good production yield. The coffee producers of the south of Huila are mostly second-generation farmers. Coffee is both a passion and a business for them, which is why they continually seek to improve the quality of their coffee to achieve better prices. Many of these producers have experimented with different fermentation times, vessels in which the coffee is fermented, and other techniques.

Ethiopian coffee production is profoundly influenced by the country's three main seasons. The Bega season (October-January) is the long dry period, crucial for coffee harvesting and processing. The Belg season (February-May) brings the first rains, essential for coffee flowering and early fruit development. The Krempt season (June-September) sees heavy rainstorms from the east, crucial for the later stages of coffee fruit development and ripening. By the end of September, the rains cease abruptly, allowing the coffee fruits to ripen, leading to a bustling harvest period by November.
