We’re currently delivering in our electric car to Aberfeldy/Grandtully/Kenmore/Acharn/Fearnan/Fortingall/Glenlyon and anywhere in between and are open to going further afield. We just love how the iconic Chemex brings such sweetness and clarity to the cup.
When using this brewer we’re fans of the 4-6 method in which the first two pours (which bring acidity and sweetness) account for 40% of the final yield and the remaining pours (bringing strength and body) account for 60%. We suggest starting with a coffee:water ratio of about 1:17 but feel free to adjust stronger or weaker to your taste and don’t forget to rinse your filter paper with plenty of hot water first to avoid those papery flavours.
Anyway, we hope you’re all enjoying your Sunday and here’s our recommended brew recipe for 500g of a delicious Bolivian Mamani Family Chemex...
29g coarse ground coffee
First pour: 55g and wait 45 seconds for the coffee to bloom.
2nd pour: 145g
3/4/5 pours: 100g each
Total brewing time: approx 4-5mins
Guitar playing while you wait: optional.
